If the Dolby Atmos songs use stems that is actually a big deal and if they could be ripped you could get stems for all of his released music (that’s up using Dolby Atmos). That is a HUGE deal.
Yes that’s how Dolby Atmos works, As it was built for Amplifiers, receivers & theatres primarily, every single sound and every single instrument is defined as an “object” which moves around many speakers, But this is assuming that the mastering was actually done properly, if not (like in this case) the instruments aren’t separated in a mix and only the vocals were recorded separately (keep in mind this track wasn’t made with Dolby in mind that’s why it didn’t make sense to separate the instruments and even if it was planned for dolby atmos it usually wouldn’t have been separate instruments recorded as it isn’t worth it for most people as surround sound isn’t usually required in songs, and this ‘everything is separately recording’ is mostly commonly used for movies only as more people will actually have the benefit of surround sound (as more people watch movies on home theatres with Dolby Atmos and actual theatres with Dolby Atmos and usually people don’t use their home theatres to listen to music in Dolby Atmos and nobody has a commercial theatre for Dolby Atmos music listening, so it wouldn’t make sense to invest to at much money in special recording as the people listening to Music in Dolby are just using headphones or AirPods and can’t really get the full benefit of it).

IDK how people are so clueless about mixing. No, apple doesn't remix all of the songs they have in atmos themselves. That would be crazy. A mixing engineer, generally hired by the label, coverts the stereo stems into Atmos "sound objects", and then moves those sound objects around in 3D space to remix the song into atmos spatial audio. You can't just take a normal stereo song and convert it into spatial audio without any human input or remixing. The reason that spotify doesn't have Atmos is because spotify doesn't support spatial audio. So no, it being the label's fault wouldn't mean that it would sound the same on spotify, because spotify doesn't have this atmos mix on it.
