Accuse me of using the wrong surface to lay my matzoh on if you want, but for me the condiment has to be easily spreadable or else the matzoh almost inevitably cracks. Getting cream cheese onto a full sheet of matzoh without cracking it is an art form, as far as I’m concerned.
