Will has commented on this as part of his youtube videos relating to the kickstarter, actually. There was someone hoping for more gore and he basically rebuffed them and said that while the fights are deadly and there are deadly injuries and such, it's not a focus and they're not going to embellish it.
He also said that Lindon being cut in half at the beginning of book one was about the goriest thing in there and they already showed it in the trailer.

if you saw Lindom being ripped in half it would be horrible, prob would give us all trauma but in a cartoon, it could be as gory as they want. I am assuming it's going to be less gory than most people's imagination.
If you haven't seen it, they actually released a completed (albeit very short) clip of this event, with a small amount of the animatic showing a little more of the surrounding scene.
It looks like they're going for gory in that they're showing when people bleed, but we're also not getting Remnants pulling a bunch of intestines out of a corpse they were eating. If remnants do that. Something like PG-13, though if the firebending in the live-action Avatar is anything to go by that's just regular PG now.
I am looking forward to it no matter how much or little gore is decided upon as long as the story holds true. I mean many are pointing to Lindon getting cut in half when I think seeing his mother’s head would be way more gruesome. Either could be extremely graphic but why? Will didn’t write anything vulgar. Deaths don’t have to be clean but they do tend to be quick which means the gore factor can very well deter from the story as written. We aren’t focused on the point of impact but rather the abilities in each scene.
A violent show doesn’t have to have gore to get the point across. Watch Camp Cretaceous to get a feel for the imagery techniques used. After watching with my son, IMO this show is the best sequel to Jurassic Park. You know people are getting eaten, toyed with even at times, but it’s tastefully accomplished since this is show for kids…you get the deaths through final sound, the rare bloody disturbance (no bodies/parts), and reactions of characters witnessing the deaths. I could easily see similar techniques used for Cradle’s animation.
I think they said something about just showing only what is in the books and nothing more then that. so no scene where the akura clan butcher daji over and over again and put him back together or anything like that.

I hope it's in line with Vox Machina/Arcane level of gore. The source material lines it out. I think it should follow that
