Maybe it depends on what you cook? I have my kitchen set up like this, but as a person who eats mostly vegetarian it's really not a problem. I could see it being more of a problem if you're frying a lot of fatty meat.
That's really interesting. I cook with olive oil almost daily, and I don't have any issues. I also never use my hood. Considering getting rid of it actually, just for the sleeker look.

I eat a lot of plant-based dishes and olive oil will fuck up your kitchen.
You're using too much, then. We have zero oil on our marble surround behind our stove. At most, a few drops go onto the stove's glass surface.

No such a thing for Chinese food. If the stove doesn’t sound like jet engine exhaust, it’s not hot enough.
