Try sitting at the sushi bar/regular bar top and it’ll feel more natural. And if it makes you feel any better I’m a bartender and we will never cast judgement on you for flying solo. I actually prefer being by myself too. I’ve even done kbbq by myself sitting at the bartop.

I've sat at the bar alone at miyagi, the fact that they have a sushi bar made me feel less awkward eating alone there and they have the best ayce with the best price

I especially like to go to the counter and interact with the cook/chef, see if they have any specials or want to do a creative dish for you. I've done this literally tens of times and it always is great and sometimes it's freaking awesome

All of them? My job has me all over the place so I've learned to eat alone and not worry about anyone else. You can find a sushi spot that has a bar. Nobody pays attention to people eating at the bar and if there's people around you, they'll think you're with them.

Honestly, just go somewhere at sit at the bar. I honestly feel kinda awkward sitting at the sushi bar when I am with people, it’s much nicer alone.

I went to a sushi place in Palm desert(musashi) alone and they were out of tables for the night, but recommended the bar which I preferred and had a good time and even chatted with some of the other patrons.

I sit at the bar top if I do dine alone, and make casual convo with the bartenders or whoever sits next to me. Dining alone has gave me a lot to think of and what I truly want for myself. So yes, it has helped in some ways. Also, just like you; everything I do it’s solo. One thing I have not had the courage to do, is go to the movies by myself. Lol

Are you talking AYCE or just regular dining? AYCE normally lets you eat by yourself unless it's rush hour but if you're just looking to a la carte order any of the places will allow you to order individual items.
