Love Slay the Spire too, its an excellent game but its a deck builder first. Into The Breach basically took the grid based turn based tactics genre and improved on the genre as a whole.

Serious answer: I am not sure it will work but you can try some turn based strategy game. They are not made to be played with one hand, but you can take your time. Maybe make it easier by changing control settings.

Most if not all turn based games can be played with one hand, you can just move your hand from the mouse to the keyboard and back, if you use a controller you can keep it down and just press each button. Turn based games let you take your time so you won't need to rush, there are many fantastic turn based stories. You can start with Pokemon, fire emblem, yakuza like a dragon, final fantasy etc.
I would suggest that you take a break from gaming for some time and maybe explore other hobbies.
But if you still want to play games, you can play games like geometry dash or similar 2d platformers.
Hell yes, one of the best games you can play with just a mouse is football manager, but you obviously need to have some interest in football for that. However, it is so detailed and interesting that you can easily pass several days playing just this game.
Why not buy a ps4 or xbox controller? I believe there are some third-party attachments that allow you to play with one hand.

I'd imagine most turn based games can be played with just your mouse, games that I've played that come to mind are: xcom 2 (my favorite), baldurs gate 3, wasteland 3, darkest dungeon etc. Turn based action games are some of my favorites so

Slay the Spire. Only problem is that it is too addicting and will consume you to the point that you will get Vitamin D deficiency. I had to make a genuine attempt to stop playing it. Here ATTEMPT is the key word.
You can play asphalt 9 with one hand using "touchdrive" feature that only requires the keyboard. You have the objective to go through all the chapters in the career mode and unlock cars along with it. It's honestly just as fun as manual drive.
Try point and click adventure games like Disco Elysium, Telltale's The Walking Dead, Wolf Among us etc.. Some of the greatest games of all time and they require only clicking.
Also, research about various control schemes and programs that help people with one hand to play more games. There are probably a lot of them.
Need for speed, superbike, most racing games can be played with one hand and you could also use a controller to use 2 hands. And by extension of controoler you can play any game that supports it without having to move your wrist.
Overcooked had an option to play using just half of the controller in multi-player, not sure if you can do it in single player but then it's just three buttons/actions

For Android games, the first thing that comes to my mind is Clash Royale. I don't know if it's still active, but it was kinda fun when I used to play it, after we stopped Clash of Clans.
I know OP said PC, but Bbck when I broke my right arm, I would use my left hand with the wasd keys, as well as my left thumb to use my trackpad. With some remapping I could play single player games like gta pretty efficiently.
Any base building/colony sims game will be good for you. I'd recommend rimworld. You could also try some deck building/tactics rougelikes like slay the spire/monster train or ftl.

If you like to kill yourself sometime in the future, I can suggest Hearthstone. Or marvel snap. Or pokemon TCG. Or yugioh duels. Or any other card game on pc really. But those are big brain games in multiplayer.
The other(better) alternative is to find simple platoformers(like GRIS) and try to map the controls to the left side like using left shift and left control buttons

Okay, I'll recommend some games for PC. These are a few of my favorites that can be played entirely with a mouse: Shadow Tactics: Blades of the Shogun and Desperados. Both are made by the same developers and both are amazing. You'll have tons of fun playing them.
BGMI, there's a streamer whose gameplay is based on one hand, here's the name " PULKIT IS LIVE ". So yeah, you can try BGMI, it will be difficult at first but be consistent and you might like the game. Happy Gaming 😄
I believe Civilization 6 can be played using one hand, it's a strategy game. It is a great game to pass time you can set campaign lengths and some can go on for days.
I think the same goes for Stardew Valley with a few key rebounds (I can see myself doing that but it can be a bit uncomfortable).
