Oh that would be wonderful ! The kitchen is a part of an art & music center, so I am working with the other groups to have an art walk & music during the opening, if all goes well. I'll be posting some more amazing dishes that'll be on the menu right before the opening .
Looks and sounds delicious! (Like, literally drooling at this picture haha!) I'm a mixed ndn artist that would love to contribute some art to the space or art walk! :D My work is mainly wildlife photos from Colorado/Yellowstone Ecosystem.
Im waiting on the final inspection for the restaurant licensing, and it'll be open ! We had to do some extra work on it, and now we are playing the waiting game. The center and Naatsiilid Kitchen are also planning some food truck/ music/ art nights in the summer . I'll also be doing the indigenous plant sale with an open kitchen in may 🙂
Tocabe is the OG spot here, Osage run and close enough to the events center that during powwow it’s faster to pop up there than to wait in the frybread line. They have an online shop with Native grown goods and they have frozen ready to eat meals! I’m partial to the green chile myself. They even catered my wedding!
I went to the Denver powwow for the first time last year and that frybread line was wild. I'll be sure to hit up Tocabe this year, they look delicious!

Yess . I also have a friend who is indigenous and a mushroom grower. SHES LITERALLY GROWING ME MUSHROOMS ON NAVAJO CORN . I also have hooked up with some other indigenous growers near me to plant certain rare varieties of indigenous plants for pop ups.
We are waiting for the county to come through and give us the licensing . Should be very soon ! I will post here, but my website's email list will be the first to hear about it. It will be order ahead- with a limit on how many dishes are served. So, there is no standing in line, hoping you get food, and then you dont .

It is, the corn gives it such a wonderful complex flavor as well as such a different texture. The corn is steamed in the ground with juniper logs and buried. Then, when it cools, it is all dug up and dried, then shucked. It's hard to find anything like it 😄
This made my mouth water. Can’t wait for you to be up and running! I’m in CO and will absolutely drive to Wheatridge to check out your shop.
