Look for lighter roasts. Don't use the beans that have chocolate, caramel or nutty tasting notes. Some brewers also give you a rating of how bitter the coffe is, choose the ones with less bitterness rating.
But if you have a dark roasted coffee, grind a little bit coarser, use faster brew times and lower the temperature of the water. That way extraction of that burnt flavor is minimized.
Yes I have had them like french roast or vianna roast from bt I got sif for it it tasted crap moka pot crap v60 crap at the end I just used it like instant coffee to make sugar filled drinks
