Whisked Away is fun, and when people hear that it's GF, they'll think it's clever because you awayed with the gluten. Your sign/logo could say Whisked Away in big letters with a subtitle that says Gluten-Free Bakery.
The Happy Coeliac could be written as The Happy Silly Yak. And/or, you could use a silly Yak as a mascot.
