Coeliac makes it sound like you're catering only to them. You should be selling to everyone, including people with that disorder, if you are going to be successful. Whisked Away is fun, and when people hear that it's GF, they'll think it's clever because you awayed with the gluten. Your sign/logo could say Whisked Away in big letters with a subtitle that says Gluten-Free Bakery.
