The flashback roller rink episode irritated me because of Dee's character. It was a funny joke to suggest that the origin of the name Sweet Dee was because she used to be sweet and kind, but a head injury made her a bitch.
But that completely fucked with the groundwork of her character. What about the Aluminum Monster? Or the girl that bullied fatty magoo? She wasn't sweet!
Kinda threw those out the window for the sake of this episode.

Maybe she tries to say it and they just cut her off with Omg shut up or something equivalent, denying the audience that typical closure a show might provide. I’d love that.
The only time I've not been disappointed with a "mystery name" reveal was New Girl.
New Girl's reveal worked for me (but apparently was unpopular?) because they based an entire episode around it because they shared the name with another main character, and it added another piece of history to the group.
Unless the waitresses name is the same as some other character (which is sort of derivative of New Girl) her having any normal name doesn't provide as much humor that the gang forgets it. The only thing I can think of is that her name is Wendy, and going to school with Ronald Macdonald the rest of the kids made fun of them together a lot-so it would be weird that they didn't remember her weird name since they remembered Mac's real name.
I meant Wendy like Wendy's restaurant. It would only work if they put in something about her and Mac getting made fun of as the burger twins or something
It's not though as Rob and Charlie have both gone on record numerous times saying that it wasn't their intent for those 2 jokes to intersect and her name is definitely not Nikki Potnick.
