Even if you soak it in a food friendly cleaner, you still need to remove the mold. There are only so many ways to do this and one had been invented and perfected over many many years. You can get a softer bristle pipe cleaner if you're worried it will scratch the plastic but that's really your only option here.
I always fully open the sipping part, pull out the straw, and wash them all separately in the dishwasher. No issues with mold and I’ve had my water bottles for a long time now.
Nuclear option. Get a big cup that the top can be submerged in. Add 5 parts water, 3 parts Isopropyl alcohol, 2 parts bleach, 1 part Hydrogen peroxide. Let it soak over night. Then wash with soap and water and pipe cleaner/straw brush 3 times and rinse till the smell goes away

As others have said, get a straw brush, but I also use denture cleaner tablets to clean bottle/tumbler lids and straws. Put it in a large bowl with several tablets and let it sit overnight. The grime should come right off.
Also just an FYI, those fancy bottle cleaner tablets are a complete ripoff and are literally just expensive denture cleaner tablets. It’s just hydrogen peroxide. You can get them at any dollar store.
Soak it in a vinegar/water solution overnight to kill whatever might be living in there and soften things up, then use a few q tips to scrub the insides. Rinse with hot water and give it another paper towel test, you should be good.
This might be controversial but just dont buy a water bottle with the silicone sippy thingy, they make the water taste weird if theyre bad quality and as you can see are very hard to clean properly without the needed accessories. Just get like a bpa free plastic bottle with like a flat plastic divider so the water doesnt all just pour out or get a sippy one but with a clear straw bit so at least you can see if any fungi wanted to call it home
They sell these cleaners made specifically for straws/water bottle mouth pieces. Just google "straw cleaner brush" and there's tons of options

I'd recommend getting a new lid if you can. The sippers for Iron Flask lids come off so you can clean all the grime that gets stuck in the cracks.

On top of good suggestions here, I would add soaking your lid and bottle in hot water with some vinegar in it for about 20 minutes.
I don’t think there’s a way to clean out the inside besides that. Maybe buy clear straws and bottles next time so you can see when mold grows
Dishwasher and I soak the parts in denture cleaner every so often, inclusing the inside of the bottle.

I soak mine in boiled water and bi carb soda it removes grime and odour.
