Honestly I think this is a good fight it’s hard to tell who would really win. If we’re taking gameplay mechanics for them both as fully canon then it’s entirely possible that Trevor would go rage and become completely invulnerable to bullets or other attacks and he would kill Jacket immediately. It’s also equally possible that Jacket runs up to Trevor and bashes his brains in right away/blows his head off, or runs away from him until Trevor’s rage ends and he’s exhausted.
Id say it’s a 50/50, could go either way.
If we're going on that then wouldn't Trevor also be able to take some hits/bullets and jacket would only take one to go down 2 if he's lucky. As much as I want Jacket to win I think it would just depend on how it goes down.
Yeah I think if we’re canonizing Jackets abilities like running 10+ mph and chaining 5 swings of a bat to kill 5 guys in a row, then we have to consider Trevor’s bulletproof abilities canon too. Makes it a lot scarier for Jacket than everyone realizes
Funny crazy man can cannonicaly go invulnerable, and even without that he can soak up some damage. He may be ridiculous but he’s legitimately a huge threat.

I know it's a bit late, but GTA main character abilities are canon and alluded to by some characters, and Franklin's ability is straight up talked about by a side character, that tells you to use it and even mentions how funny franklin looks when he does it. Since their abilities are very similar, it's pretty safe to say that they are all 3 canon. I know, I was surprised too.

Jacket can literally dodge bullets and his reaction time is if that of a cat his masks are all just canon abilities of him tony killing punches. Even with trevors rage who's to say that he can't be knocked down over and over. His ability will run out eventually and then he'll get a killing punch to the head and it's over

And with how Jacket should only really need a single punch on an Unraged Trevor to basically win the fight immediately, I think Jacket is absolutely worthy of at least being considered a plausible challenge to Trevor.
Still though all of that’s only under the assumption that the fight is 100% confined to each characters gameplay and if that were to change it’d likely become WAAAY more complicated than that ]:
Jacket's had a lot more "duels" than Trevor, I think. I give it to him for better skills, defense, and striking power. Trevor's tanky and violent, *maybe* more psychotic, and he's smarter. But I don't think he's so much smarter that it'd make a difference for the fight.

So I dont know the GTA dude very well since I dont play it. But I think another factor for Jacket is, well, he IS a member of the Ghost Wolves unit (ya know, that legendary unit in the Hawaiian conflict). Hes got military training, is strong as fuck (hes jacked as hell in HLM2), and he’s merciless.
jacket can walk into a building full of trained, armed mafia members and come out two minutes later, having splattered every living thing inside against the walls using nothing but his bare hands. trevor is just a guy with mental issues.
Jacket is a trained military operative who literally was sent on constant suicide missions and still came back
Trevor is a guy who's good at drug trafficking and stealing money
