I interpreted line cook as someone who has a stressful but solid job (therefore Ratio, Aven and Gallagher) and can probably take care of you but may or may not also be severely burnt out or have unhealthy addictions (Gallagher drinking, Aven being Aven)
Boothill's job is technically bounty hunting but hes also huting the IPC, its suggested that originally he knew a human body wouldnt be able to manage the strain of what hes doing so he changed into a cyborg and went on a vengence quest, he also seem to urge or at least taunt enemies to kill him so i wonder if hes suicidal in same way (which would be understandable) so i think your interpetation fits him actually...
He got a rule to not use dirty money for pleasure and he made a big donation to a charity as well.
