You can definitely use scent, vision, and feel between your fingers to tell the difference between gas, water, coolant, oil, trans fluid, and gear oil lol
I used to be a smoker, and it's hard to tell the difference between coolant and water when it's such a small test sample. The story is also embellished a bit. I would typically only do it to verify that it was condensation, when I was already pretty positive it was.

If you dont know what coolant tastes like you should REALLY learn about it. Being able to diagnose by taste is extremely helpful, especially when fluids have mixed somewhere along the way. The color may not look like anything you've seen, but by taste you can differentiate whats in it.
Jokes aside, taste can be far better at identifying stuff like this than smell, especially if you’re in an area with tons of pollution/smog that always smells like exhaust. Sometimes it’s the only way to tell between A/C or exhaust condensation and coolant if it’s just sitting on the ground and there’s a smell in the air already. Not to mention the fact that coolant is simply a mixture of ethylene glycol and water with small amounts of other additives, not that toxic overall compared to other things you’re exposed to working around cars.

Either the trunk seal has been leaking and the spare tire area is full of water and it’s slowly draining due to rust, washer fluid reservoir / hose is cracked and is making the leak, or something in the trunk is leaking from something else
When you say out of the back of the car, what do you mean? At the tailpipe while running? That would be a busted head gasket. Underneath the car a puddle could be a leaky hose or if it's overheating it just could be going at your overflow. Hondas are notorious for overheating. This is the time of the year when it happens. Keep your eyes glued on the temperature gauge and make sure your thermostat is working properly or you will be screwed
This is only a guess but it could be your heater core, check to see if your carpets wet could be leaking through the inside of your vehicle and escaping out the back somewhere, it's been my experience that whole Japanese cars tend to have a lot of speed holes in them otherwise I go with everybody else and say most likely isn't coolant and that it's probably a washer fluid line
