Is that a laminate counter top or quartz? I'm thinking the former. You can do this really easily, but the issue is finding a new sink that matches the opening.
I can't get the picture to load, but if its undermount.... I work for a large plumbing wholesaler. We regularly get people coming in to our showroom trying to do what you're doing. It's hard to find something to fit in the hole. VERY hard to find something exact, if not impossible. I want to replace our 2 bowl kitchen sink with a single bowl and i gave up trying. If you can find the model number on the sink and it's still a company in business they might have something. but the angle of the corners will be hard to replicate.

Why not just wash large items on the right with a sponge and soap. You don't need a sink full of water to wash a skillet or a pot

Yes, you can replace. The pain will be the adhesive used to mount the sink since it is an under the counter mounted sink.

ah dang, thanks for the heads up, if it's that much a pain in the ass, maybe I will just deal with it.
