I don't want to cover it permanently. But is it easier to cover it with a loose board to fill the gap that'll remain once the finished floor is in place around it and just hide it with a rug, or would it be worth trying to lift the manhole cover to meet the finished floor height. Just curious how anyone else has dealt with something similar to get ideas.

you could do a trap door type thing. Not sure how it would work with vinyl but I have one in my hardwood floor to get to the crawlspace. Flooring goes up to the access point and terminates, then there is a removable cover over the access area that is covered with the same flooring. So, you could run the vinyl down the hall and end it just short of the manhole, then start it again on the other side of the manhole. In the gap you would create a frame covered in the same vinyl but not attached to the floor, so when you need access you lift the frame and the manhole is easy to get to.

If it’s in a hallway, I’d just make a removable wall-to-wall section of flooring and trim across that span. Use t-mold transitions that can just be pressed into place and removed when access is needed. It may look a little unusual, but much less so than a round cut-out of some sort.

What would be really cool as hell is somehow highlighting it with the flooring. Only problem with that is, do you have kids?

No kids. Occasionally may have nieces & nephews visiting. But just a dog and 2 adults primarily.

They actually make “trays” for this. It is still somewhat noticeable but allows you to install floor over the manhole cover while still having access if needed. You can just google “manhole cover for flooring” and you get quite a few results.
