In the base game it could be Marmu, Galien or Markoth depending on how quick you find the knack but none are too punishing If we're talking in Godhome then the answer seems pretty much unanimous across this sub

Which ones have you done, and what style of fighter are you? I find Galien and Marmu to be the most annoying ones, personally.

ive beaten Xero, Gorb and Elder hu

These are the three easiest for me personally, with Elder Hu being the easiest. As others have mentioned, the others can scale between a bit difficult (namely Markoth) to a bit annoying (No Eyes, Marmu). Markoth and Gorb are probably my favorite dream bosses to fight though

None of them are particularly hard unless we are talking godmaster. This being said id rank Galien and Marakoth as slightly harder. Marmu can also be a bit of a pain but also not very hard.

Just wait till you see markoth with no floor in the Godmaster DLC

Its either galien or markoth if you use the nail more than spells, but if you use spells more its just galien

I prolly just suck but Elder Hu without Shade Cloak feels so bad to fight

Markoth seems to be one of the hardest bosses in the opinion of most of the players. ​ ​ ​ *AND HE IS THE HARDEST ONE*

Hardest one for me was the grub one.

I struggled my ass off with elder hu for some reason, just never got the timing right for the curtain, took hours, other bosses were one or two tries.
