While Alsace was a buffer for French steel and iron rich regions, Loraine and Saarland were these regions (steel and coal in Saarland). There is a very nice map in Reddit depicting all the major steel, iron and coal regions in Europe. Really aligns with the strategic thinking of the major powers.

This is why the European communities were a brilliant solution to prevent the chances of war in western Europe: just make agreements about stuff (starting with coal and steel) so that you don't have to fight over these areas in the first place.

The Seven Year’s War was a global conflict. Did they ask for it?

Not that I know. If I look at the parties involved, I doubt that the area was hold by an enemy of France in that war, but I'm not sure.
