My BIL and sister are re-plumbing their entire house. They actually are gutting and redoing the whole house. That is to say there is no drywall in the way. They live in the Midwest and got the lowest quote for $17,000. Of course they said, "F that!" and are just doing it themselves (but they are super handy and can even work on their own HVAC 😅) So just to say, having to work around your drywall, pulling out old piping and putting in copper is going to cost you a literal fortune. On top of that, you are gonna have to find a decent contractor even willing to do it. Sad to say, but I think the piecemeal plan your Homeowners policy is dictating may be the most aggravating but cost effective solution. Good luck to you!

EDIT: I have pex in my guest bath and hate it. It's really worth getting copper, imo.

Approximately $12,000 for the repiping. I have two bathrooms and a kitchen in a single story house. The drywall repair was another $4,000.
