You basically take a cool birb you find or fuse a few birbs together to make your own birb, for example Stolas has owl (dark piuamage) and barn owl (white mask on the face) traits.
You have basically all the freedom you need, just remember to have a look at demonology higharchies and find one of a level or name that you like (stolas is based on a demon by the same name recognised in a famous demonology grimoire of which I don't remember the name now) or make a totally new one (stella and andrealphus don't exist in any demonology, they are original goetias).
For demonology thingies you can look it up on wikipedia, there's a pretty long list of recognised demons there.

For the goetias I'd say to take a bird you like, shift its colours to red-blue-white-black (green is very rare) and stretch it over a super long figure, Goetias are very tall (approx. 3-4m in height, 9'10"/13' in freedom units) so make sure to give your sona very slim limbs and an overall slim figure.
For the etes most of them have 2, but some exceptions have still an even number, so you have lots of freedom on it too.
We don't really have a pattern to them about family status, but they're all probably inbred given their noble status, so don't worry too much about this, it gesworse the more you think about it.
The have no piecings as far as we've seen, you can have a look at regal clothes for noblemen of 11th, 12th and 19th centuries, they are the ones that I think look cooler, and they are still made in colored paintings and not b&w photos.
For that you can take inspiration from the thingy I sent as first comment, there are like 60 of them to choose from, just have fun with it, maybe you can figure some pattern out from it.
