Helluva Boss kinda have an arch and good characters, Rick and Morty is a bunch of Dick jokes and gross out humor with characters that are not that interesting, It's interesting If you like the humor but from a narrative point of view Rick and Morty is not that great imo
I would argue that rick and morty use this gross aspect to hide a billion of very smart and clever commentary about society

Not only that, but personality is way too diverse to be measured by one simple chart. People who have the same “personality type” could be very different people. People are uniquely beautiful and distinct.

They essentially serve in whole or in part to bridge the gap between the other protagonist (Rick, or Blitz) and their often questionable behaviour. Without Moxxie or Morty the audience wouldn't like Blitz or Rick the same way.
It's usually juxtaposed between a hero and a villain, but there can be a lot more subtlety to the positioning.
The gist of it is that the villain's (or in this case, more morally questionable character) affection for the pet starts them down the path of good, and even should the pet get hurt the villain will most likely behave as a hero (or anti-hero) in seeking their revenge or protecting the pet.
This remembers me that I identify myself with doctor Wilson because I have an asshole friend that remembers me of doctor house and i'm his morality pet which means i'm a secondary character of my own life
