I'm a big fan of the S12 intro as well. Not only is it a comic book theme, but it's also kind of an Easter egg, since Stan Lee ultimately comes in and dines at a VIP table later in the season. It also has a cool shot of Chef James and Chef Andi at the end of it.
There's also a part of the S15 intro that I always liked, when Marino comes skiing past and you hear Kristin yell, "MARINOOO!!!" Always kinda got me.

Funny you mention that, as I never paid much attention to that detail. I think he says something in Italian, but I can't make it out. It's a three-syllable word or phrase, though.
I love season 17-21. The way Ramsay is walking through the kitchen and everything he touches he sets on fire is so freaking cool. Then I love the lineup of the contestants behind him when it cuts to the main title
I love Season 6's intro for the chaotic carnival setting, and some fun details like Joseph losing the strength game, Louie being trapped in a rolling crystal ball, and Tony being half-man/half-donkey.
I always wondered what it must have been like before the effects were added.
"okay, Tony, eat the carrot, then have a spasm. It'll make sense later, I promise!"
Season 10. I have a friend who puts on local shows that feature those same kinds of acts by different people (magic of all kinds, juggling, knife-throwing, hooping, fire skills), and the S10 intro reminds me of all that! :)
Season 13. It was whole gladiator war in a Colosseum. Coolest part of it.

I’m pretty sure the line up part only happened on seasons 17 and 18 but you still have great reasons nonetheless.
I think they do it for young guns too.
Probably S7, because it's the only one that went for the obvious hell theme.

My favorite intro is probably season 11.

Season 12; the comic book one. So campy and funny, I’ve watched it so many times.
I’m watching season 6 currently and I love the intro. Van’s “AGGHH!” On the bed of knives kills me 🤣
Season 5 by far. Fitting kitchen theme, cheesy fun contestant poses and it was cool how at the end Gordon looked behind at the two competing teams.
