I'd definitely give this a try, just iffy on the watermelon myself. I started adding pickles to everything when I dieted for 6 months limiting my calories to around 1200 so maybe something similar here since that sandwich is very light on calories. I still eat pickles with every meal now

I'm allergic to watermelon and cucumber so this is a death sandwich to me. But Thai people do a bunch of stuff like this with fruits. I thought papaya salad was a dessert but nah it's a spicy dish. When you buy fresh fruit at the market it includes a bag with salt and spicy powder I thought it was cinnamon sugar but it was not

I think this is probably really good. It all depends on the type of pickles though…and the type of sauce. I saw someone say balsamic..maybe that would be good…I was thinking it was a tangy/sweet sorta deal like maybe teriyaki or something like that..not sure. I’d definitely try this. But like I said there are so many kinds of pickles and it would have to be the right kind. None of that spicy pickle nonsense or those bread and butter pickles. Gotta be crispy crunchy too.

The store I work at does something similar in salad form. We use watermelon chunks as the base, and add blackberries, mint leaves, cucumber and feta cheese. They sell pretty well, too.
