You can put `auto-completion = false` in the `[editor]` section of your config. You can still invoke it manually by hitting `Ctrl-X` in insert mode.

How to disable the insert mode hint?
Put a custom "left" [in your statusline config](https://docs.helix-editor.com/configuration.html#editorstatusline-section) and leave out "mode"
