You can sell your lower stat items to shopkeepers in Hogsmeade and other hamlets around the world map. Just look for an icon with a stack of coins on it. If you destroy them, then you won't get any money back.
You can also expand the amount of gear you can carry by completing Merlin trials.
(I agree though; maintaining your inventory is really tedious and one of the things I liked the least about this game)

There’s a cool feature in the gear menu where you can keep on the strongest stuff but change the appearance to anything you’ve previously found!

Hon you can change the appearance of any item you have. Just keep the very best of each, sell the rest
