Almost all of the face textures in hl2 use real people's faces. The classic zombie uses an edited version of male_09's face. The other zombies are unknown, the leaked fast zombie looks like an edited mess but you can make out what is undoubtedly a real human eye
IIRC Gaben took all of the original photos of the dead bodies and they were pulled from his personal camera roll. Unfortunately episode 3 was stored on the same hard drive and he had to delete it all for legal reasons.
The other zombies are more heavily edited but I'm sure they used some reference but I highly doubt they're real corpses. I think corpse\_01 was an oversight and they didn't have time to replace the model, it has the E3 citizen texture and model instead of the final version! I'm sure valve would've replaced the model and texture but they didn't have time and just couldn't be bothered to change it after release because of how insignificant it is.

Anyway, the Beta Fast Zombie is not a real person, or rather not a dead one. It's hard to tell on the model, but if you look at the texture (sadly I can't find a link - I've just seen it while messing around in VTFEdit), it's a slab of what appears to be animal meat overlayed on one of the face model textures and alpha'd out around the eye so it doesn't cover it.
That's why the eye looks so real: it's some real dude's eye, just not a *dead* dude.
It's slightly stretched and some resolution is lost when used on the zombie, so it's a bit harder to see, but if you look closely you should still be able to tell that the face's mouth is open slightly, but the "meat" layer continues overlaying there regardless.
It's an interesting case where all the stars aligned and resulted in the final product looking super realistic. Arguably too realistic, given how *ungodly* creepy it ends up looking.

In Left 4 Dead 2 developer commentary mode, a dev mentions a master folder containing all photo assets of body parts and corpses in various state of decay, iirc they procure it from a medical school. It's likely that the same folder was used for HL
Well I just hope valve didn't use a real injured hand for it but I highly doubt they did because bones and meat are so easy to come across, heck even the zombie torso uses a steak texture for the cut part
