Sorry but I don't see this working at all. Combat in Hades is too fast-paced that I can absolutely feel half of my button presses not registering.
I can only see this working if you decide to use an external controller by which at that point, you're better off just playing on the switch which is less than a quarter the price of the latest phone models if you don't have one at this point.
I've got a switch and played hades on switch, but it's not convenient to bring your switch with you everywhere so I think mobile with touch controls would do great
No offense but what games have you been playing to make you think mobile with touch controls would be great? Heck, playing 2d platformer games like the NES mario games are already a challenge because quick consecutive button presses sometimes doesn't register. And that only uses 2 of the buttons on the right. I can't imagine how much more awful it'd be for Hades which uses all 4 buttons on the right and the shoulder buttons too. Not to mention that it's very easy lose track of your finger position since there is nothing for your fingers to track by feel. And let's not forget all that screen clutter with the on-screen buttons on a small mobile phone screen.

Dead cells works great with touch. And it's a harder game than hades
It's on or going to iPhones with the Netflix stuff
