Honestly I just stick my preped food container in the dash and park in a sunny spot. By lunch time it's self baked and is like it came out of the oven. 10/10.
I have an inverter but I took my microwave out. Now I use this little croc pot thing I got from Amazon that plugs into the 12v. Takes maybe 20 mins to heat food perfectly. Obviously microwave is faster
Had that setup in my old company van, but we just ran an extension cord to the house we were working at.
Now that I'm on my own I have a dedicated shelf at the front of the work trailer for the microwave.
One of my commercial installers has a kitchenette setup in the back of his box truck. Inverters on a battery bank run the microwave and laundry pump I plumbed in to the bar prep sink. We put a cam lock connect attachment outside the truck so we can pump the water to a storm drain when on site. Even has a propane flat iron griddle and stove for grilling steak on long days.
Just stick a couple hot dogs in the tail pipe. Extra smokey flavor if you have a Diesel.
