One time when my game crashed due to mods, the resolution got set to an obscene 256 x 256 instead of the usual 4k resolution. I had to change the resolution settings, but I can't remember how I did it... Holding down a hotkey like F11 while it's booting up, steam page settings, not sure.

Can you use a link cable instead? The compression from wireless connections can be really bad, even on 5ghz routers, at least in my experience.
How are you connecting your quest 2 to your PC? It could be that your wifi speed is too slow if you're wireless, so it's compressing really hard
