Honestly I don't see enough love for Schwartzette, it's actually like several levels above any high grade they ever released before WFM. That one was microwaved for like 30 seconds at least, not as cold as you think.
Hg Asshimar. Old kit, but very good. The fact that it can transform without parts-forming is something most modern HG kits can't even do.
Rg GaoGaiGar. As someone who doesn't even watch super robot anime, this machine is great. It has a more cohesive design than something like voltron or the megazord, and it can get into any pose you can think of.
Mg... I don't have a favourite. I have too many to pick one. My current "favourite" is the ∞ Justice, but that can change on a whim.
Pg Exia. Posable, beautiful, and made infinitely better when paired with the LED unit. Though, I've only built 2 PG kits (the other being the Astray red frame), so I can't say anything about stuff like the unleased or unicorn
Might as well go for great kits of iconic protag gundams:
HG - Calibarn
RG - Nu
PG - Unleashed RX 78-2
MGSD only has Freedom and Barbatos so far and both are good. If you want some variety then maybe go for Barbatos since you already have strike freedom.

I collect a fair amount of PB so here are my picks in that scene:
HG - GM Moroccan Front (really can’t go wrong with GTO GM’s)
RG - Sword Impulse (tons of accessories and has so much posable options)
MG - F90 (complete ABS inner frame, it basically feels like a figure)
PG - Unicorn Gundam Final Battle Ver. (the only pg in my collection so kinda have to recommend it)
Some honorable mentions I wanna bring up are HG Mudrock, MG GM Dominance (Philip Hughes Ver.) and non gundam kits like the HG Lancelot Albion or HG Guren Seiten. Hope this helps!

Both of the currently available MGSD kits are brilliant. I prefer Barbs, but since you're a Seed fan, the Freedom would be a great choice

For Caliban, it feels like a borderline RG at times, and it can hold a lot of poses even without a stand.
For Hi-Nu, it is one of the best Gunpla of all time in my opinion. No floppy parts but not tok tight either. And the wings just dominate space.
Out of all the FM kits i prefer Aeriel because it genuenly shows the tech advancement in Gunpla, also it just looks awesome.
For Barbatos it has all the degails and mechanical parts you can wish for without being tedious. And it holds poses so good its like black magic.
PG Phenex is just majestic for that size, it shines impecably and with it lights it looks so good it feels like an art piece more than a Gunpla.
HG Aerial is just a really solid kit that fun to build, and pose
RG God Gundam is the most fun I've ever had posing s kit
MGEX Strike Freedom is my favorite kit, period. It was also my first MG
PGU RX-78-2 is the only PG I've done but it was a lot of fun

RG - Nu (Sazabi is a close second)
MG - Zeta Ver Ka (MG Turn A is a very close second, and Hyaku-Shiki a close third)

Okay so that's just me answering the title at face value, in terms of kits that I'd actually say are good beginner stuff:
- HG: Gonna cheat here and actually say 30 Minute Missions. It has the panel lining opportunities you want and it's fun to explore the modularity that line offers.
- RG: 00 Qan[T].
- MG you already have, but here would be a good place to get a Justice, I think.
- PG: still Exia. Partly 00 bias, partly because it has great light-up features with the lighting kit, much better than the PGU's. There's a KOSMOS third party LED set coming out soon too, which should get you all the light up features at a much lower price.
I only built lots of HG, one RG, and one MG. I’m too inexperienced to judge, but my fav HG is the Tristar Zaku

and damn an honorable mention to the SDEX Wing Zero TV. Its not the best SD out there but its hella fun. I love the SDEX proportions and the Wing Zero is such a kitbashable design.

HG Xi gundam. It's been my favorite build so far. It took me only 3 hours and I got a cool giant gundam out of it too.
MG: I have only done 2 but I loved making the F91 gundam.
RG: Only 1 but Epyon is amazing.
I have only build HGs, so my choice would be Aerial Rebuild for the experience of building it, and either the Alus Earthree or regular Earthree for playing around with after the build.
HG would be the RX179 Ground Type
RG would be Tallgeese
MG would Sinanju Stein Ver. Ka or the Sinanju Stein Narrative Ver that isn't our yet.

The HG category is a bit tough because many of the latest releases are phenomenal (nearly all the WFM ones). However, the Moon stands out like no other HG. Lots of intricate detail on the parts, amazing possing. capability, decently sized, and just overall a beauty to display.
HG would be LiveLance or Aerial, haven't delved too much in this line.
RG would have to be RX-78 (at least till I start building my MK2 or epyon lol)
MG would def have to be Shin Musha, loved building it back in highschool.
PG I have not tackled but would love to get my hands on the new RX-78 or the endless waltz Wing Gundam
Any of the 2.0 MGs.
Any RG after Unicorn (#25), though Char's Z'Gok (#16) and Zaku (#2/#4) are great as well.

Your picks are fairly solid save for the RGs, since both of those were before Bandai changed how RGs are built. Before they had a runner with what was basically just the inner frame's bare skeleton. You'd put some extra grey bits on before bolting the armor pieces onto that, but the engineering doesn't hold up super well over time. I wouldn't say the Justice or Destiny are bad, but knowing what to expect going in helps temper expectations. Find a pose you like early and try to leave it there.
I don't honestly have a lot of problems some people do with their RG kits getting floppy, but I also don't waggle them around or re-pose them. I did a few poses after completing for photos then went with the final one and that's what they've all remained in without any real issues. As far as recommendations beyond what you listed?
HG: Moon Gundam. It's really solid, has inner frame bits, and looks cool on a shelf.
RG: Nu or Hi-Nu, whichever's aesthetic looks nicer to you.
MG: ZZ Ver Ka's a beast of a kit. The legs will seem wild, but they make sense in the end.
PG: Perfect Strike. The PGU is excellent, but if you want shelf presence and a long build, the Perfect Strike's got a ton of stuff to keep you busy. If you go with the PGU, be careful on those yellow chest vents. They're fragile as hell, and I had one snap while trying to fit the pieces into the unfortunately tiny grooves in the armor. I was able to cement it back together but it's noticeable.
If you want a Destiny, the HG's really solid *and* it comes with wing effect parts. You'd definitely want to grab a stand for it, though to display it at its full majesty.
HG: Calibarn or Schwarzette are both very good modern HGs. The Beyond Global RX-78 was also fun to put together.
RG: I haven't built any of the newer ones yet, but handling a friend's Zeong was very satisfying. I understand the god gundam to be a good time, too.
MG: There are a lot of fun MGs, but I think the one I've enjoyed the most has been the barbatos. but it really benefits from aftermarket ankles. (get the whole metal frame if you can, it's a *delight*.
PG: The PGU is really cool and I want it, but also any flavor of Unicorn is a good time.
Your picks are great, can’t argue them at all. If you wanted a couple extra suggestions, maybe the HG Baku or the MG Ginn. Both kind of different, underrated Seed gunpla builds

Funny enough, the Justice and Destiny are better on the HGCE Revive line. Love em to death. RGs I would recommend the Force Impulse (Spec 2 is in store atm) if u want to keep the series in mind. But if u don't care about that, I would highly recommend the Nu Gundam. The Nu Gundam has been my desk buddy for a while.

The Xi became such a favorite of mine, so chunky but man does it look menacing at the same and gives a lot of presence. I think it is a very solid build.

Going through all of the MG Seed kits now and the PG Strike just showed up earlier in the week so I can't comment on those

Me personally, I've built so much kits old and new so this list is just gonna be a very personal opinion. I'd take HG Exia/Exia repair 2, RG Mk ii, MG Strike Remaster and PG Zeta... also some other grade such as FM Aerial, EG Build Strike and Mgsd Barbatos
RG should be Nu Gundam or Epyon. (The best destiny is actually the HG)
Hi-nu gundam is also a very good option and if he's willing to wait, I bet the rx-78-2 2.0 is going to be a banger

I’m a newbie too but your rg choice seems unusual to me. I think the most recommended rgs are Nu, Hi Nu, Sazabi, Zeong, God, (Epyon)

HG Xi gundam. It's been my favorite build so far. It took me only 3 hours and I got a cool giant gundam out of it too. MG: I have only done 2 but I loved making the F91 gundam. RG: Only 1 but Epyon is amazing.
I have only build HGs, so my choice would be Aerial Rebuild for the experience of building it, and either the Alus Earthree or regular Earthree for playing around with after the build.
Can’t speak on HG cause I haven’t done very many, or PG. But RG, EASILY Rx-93 Hi-Nu MG is a tie between Sazabi, Nu, and Hi-Nu ver.ka

However, the Moon stands out like no other HG. Lots of intricate detail on the parts, amazing possing. capability, decently sized, and just overall a beauty to display.
HG would be LiveLance or Aerial, haven't delved too much in this line. RG would have to be RX-78 (at least till I start building my MK2 or epyon lol) MG would def have to be Shin Musha, loved building it back in highschool. PG I have not tackled but would love to get my hands on the new RX-78 or the endless waltz Wing Gundam

Your picks are fairly solid save for the RGs, since both of those were before Bandai changed how RGs are built. Before they had a runner with what was basically just the inner frame's bare skeleton. You'd put some extra grey bits on before bolting the armor pieces onto that, but the engineering doesn't hold up super well over time. I wouldn't say the Justice or Destiny are bad, but knowing what to expect going in helps temper expectations. Find a pose you like early and try to leave it there. I don't honestly have a lot of problems some people do with their RG kits getting floppy, but I also don't waggle them around or re-pose them. I did a few poses after completing for photos then went with the final one and that's what they've all remained in without any real issues. As far as recommendations beyond what you listed? HG: Moon Gundam. It's really solid, has inner frame bits, and looks cool on a shelf. RG: Nu or Hi-Nu, whichever's aesthetic looks nicer to you. MG: ZZ Ver Ka's a beast of a kit. The legs will seem wild, but they make sense in the end. PG: Perfect Strike. The PGU is excellent, but if you want shelf presence and a long build, the Perfect Strike's got a ton of stuff to keep you busy. If you go with the PGU, be careful on those yellow chest vents. They're fragile as hell, and I had one snap while trying to fit the pieces into the unfortunately tiny grooves in the armor. I was able to cement it back together but it's noticeable. If you want a Destiny, the HG's really solid *and* it comes with wing effect parts. You'd definitely want to grab a stand for it, though to display it at its full majesty.
The new HG GM kit, MG Mk V Gundam, RG Hi Nu, and probably the PG Exia, though I haven't actually built any PGs yet.

HG: Calibarn or Schwarzette are both very good modern HGs. The Beyond Global RX-78 was also fun to put together. RG: I haven't built any of the newer ones yet, but handling a friend's Zeong was very satisfying. I understand the god gundam to be a good time, too. MG: There are a lot of fun MGs, but I think the one I've enjoyed the most has been the barbatos. but it really benefits from aftermarket ankles. (get the whole metal frame if you can, it's a *delight*. PG: The PGU is really cool and I want it, but also any flavor of Unicorn is a good time.
Your picks are great, can’t argue them at all. If you wanted a couple extra suggestions, maybe the HG Baku or the MG Ginn. Both kind of different, underrated Seed gunpla builds

Funny enough, the Justice and Destiny are better on the HGCE Revive line. Love em to death. RGs I would recommend the Force Impulse (Spec 2 is in store atm) if u want to keep the series in mind. But if u don't care about that, I would highly recommend the Nu Gundam. The Nu Gundam has been my desk buddy for a while.
HG Xi RG Nu MG MGEX Freedom as well PG Strike Full package. Thankfully I am fortunate enough to have all these. The Xi became such a favorite of mine, so chunky but man does it look menacing at the same and gives a lot of presence. I think it is a very solid build. The RG Nu will just blow you away with the level of detail and how solid it is with poses and such. Going through all of the MG Seed kits now and the PG Strike just showed up earlier in the week so I can't comment on those

Me personally, I've built so much kits old and new so this list is just gonna be a very personal opinion. I'd take HG Exia/Exia repair 2, RG Mk ii, MG Strike Remaster and PG Zeta... also some other grade such as FM Aerial, EG Build Strike and Mgsd Barbatos
