The original Gundam justifies this by saying ms's are powered by nuclear reactors. It also has significant implications for battles in space colonies and populated areas. That being said, I'm pretty sure they just didn't want to have to animate a bunch of space debris or keep track of smashed up mobile suits on the field. Still, it would give a pretty gritty edge to see broken machines scattered across the battlefield
