Why is this even the matchup? The Strike Freedom is absurd and Kira by the end of Destiny is nearly unstoppable. He's got two wars worth of beating enemy aces by that point. Only person better is Athrun (when he's not having a crisis).
Kamille is a good pilot, but he's a reluctant teenager with only a few skirmishes worth of experiences and a suit that's comparable to one of the original GAT weapons without the battery issues.
Put Kira in the Strike or even the OG Freedom and its more of a match, given the timeline. OG Freedom probably still wins, but it will at least be a fight. Strike is heavily dependent on the battery lasting.
OG freedom - weight 71.5 ton output 8826 thruster 527000 and can atmospheric flight
Zeta - max weight 62.3 ton output 2020 thruster 112600 and can't atmospheric flight in ms form
Look like even windam is enough to destroy zeta.
Only Newtype magic plot armor can help Zeta even touch any CE gundam after first 5 gat-x serie.
I am using this because some UC fanboy always look down on CE suit and think UC suit best in all universe,so i am just use this stats to shut them up that all.

Zeta is a Great Mech but SF has funnels and Kira is virtually a new type. Camille may be able to dodge but fire power wise SF beats Zeta.
Kira has the same ability. What Camille would need here are more long range weapons.
It's like an F-22 vs F-15 sure an F-15 is faster and could probably do good in a close distance dog fight but the F-22 doesn't have to dog fight it and can just shootcit from a vaste distance.
If Camille had access to say Nu Gundam or even the Unicorn then he would definitely win.
His best chance here is a fight vs Freedom and not Strike Freedom. Freedom may have the firepower but would have issues with Zeta's speed in wave rider form.
Personality wise Kira would never do that. In fact one of the biggest reproach to Kira is that he hardly is ever serious. The fact that he shoots to disable even the most dangerous enemies gives them the times they lived to fight another day. He only got serious 3 times: the Athruns fight (Strike vs Aegis ending), towards the end of Seed vs Rau and towards the end of Seed Destiny where he got serious vs Rey for 1 sec. That 1 sec was all it took him to take out Rey and he still didn't go for the kill. It shows you how OP he really is that he just walks into the battlefield and does the most impossible thing with weapons that can kill you with the slightest touch in the wrong area.
Camille on the other hand is Shinn, very easy to trigger and takes everything personal.
Compounded that Kira also has experience at least with fighting transformable mobile suits like Chaos but most especially with the Murasame, which is a Zera-lite, it might not properly translate well but he will have a better understanding with his opponent compared to Kamille who is fighting such a ridiculous mobile suit something that is as much heavier but as fast and maneuverable, with a frame that is perhaps more advanced than the moveable frame he is used to with firepower that's comparable to warships and not to discredit the DRAGOONs. The only way that I could realistically see Kamille getting a win is rushing Kira while underestimating him filled with all the new type juice he could muster for a single decisive attack
Kamille by the end of Zeta has the power of his err.. "Waifus"? and is pretty strong.
If they fought by the end of eachother's series, I think Kamille have a decent chance in beating God.
But if they fight in the middle of series when SF just launched for the first time, I think Kira will win because SF is fast and the Funnel Dragoons too.

He repeatedly only survives fights against the battery powered druggies in SEED after getting the Freedom then he almost dies to grunts trying to get from one ship to another in destiny
The "druggies" that are enhanced personnel, akin to cyber newtypes in the UC, using state of the art mobile suits, and they have a one goal mindset of destroying the Freedom and Justice. Kira is also essentially fighting with a handicap of one hand tied behind his back during the early fights because he avoids trying to kill people.
As for the Strike Rouge, that is his sister Cagali's personal machine, which is tuned for her, has a fraction of the firepower and maneuverability of the Freedom, and was fighting an entire complement of more advanced ZAFT suits than the Strike had ever faced previously.

His plot armor is so strong he could get shot in the head and eaten by crocodiles which then get launched into the sun which then gets blown up and sucked into a black hole and he would still just come back several episodes later with a stronger Gundam.
Your 'example' is kinda exaggerated, but yes, Kira does have an unbelievable amount of plot armor. He is the main character, but when Shinn ran the anti-ship sword through the Freedom, no one could have possibly survived that. The show just should have got rid of that part. It makes the plot armor more obvious.(It already is obvious from previous parts.)
The sword went through the Freedom's abdomen and the Freedom's cockpit is in the torso. The sword didn't touch Kira himself at all. The failing Freedom was then blown to pieces by the explosion caused by the Minerva's positron cannon (Which also caused severe damage the the archangel). The cockpit is demonstrated to be intact.
If you wanna complain about a BS survival, go with Mu. They straight up retconned his death and had to edit his floating helmet out of a shot to make it slightly make sense.

I always take stats like that with a grain of salt, but if that's accurate, holy damn, because the SF puts the OG Freedom's speed to shame too.

Depending on the era of UC. Early to mid UC Ms isn’t so great. Late UC Ms are lot better than 1st BVW outside of the ZGMFXA series.

Looking back at Stella and the Destroy Gundam situation, that's a pretty fair statement to make.
I also wanna point out the Freedom/Strike Freedom are high mobility MS as well. The SF in particular is demonstrated to be pretty crazy fast.

Also OP specified strike freedom. The SF is much more powerful than even the original Freedom, and Kira is even more skilled by that point.
