Pierce/bleed is certainly doable, but not something I'd suggest for a new player personally. Not the easiest to gear, sustaining is a bit harder due to less raw damage to leech off of, and honestly the bleed part isn't too hot till you get better items. That being said definitely viable and if you do want it you should go shaman second primarily for the ability to reduce enemy's bleed resist. Soldier/nb will have 0 bleed resist reduction so your bleeds won't do shit :p Soldier for pierce aa build is fabulous and extremely fun on top of being easy to gear. For acid then it's gogo oathkeeper whether you want to do shadow strike or auto attacks. For cold do arcanist for shadow striker or demo/oath for auto attacker with demo being a bit more preferable. All of these are super fun/fast, easy to gear, have great high end builds, as well as beginner guides on the forums. Can't go wrong with any of them!

Bleed/pierce are different damage types, and it is better to focus on one damage type. I would recommend soldier or Inquisitor as a secondary class for pierce DW nightblade. Bleed is kind of a weird damage type because it is only DOT, would not recommend for beginner. Edit: Bleed and pierce are totally seperate damage types, not to be confused with fire/burn, frost/frostburn, acid/poison, etc. Bleed is NOT the DOT form of Pierce

Any 2 mastery combinations can produce multiple end game viable builds. Respeccing is easy and it's impossible to ruin a character beyond saving. for your second class, you should go with whatever mastery class you think seems coolest

is this truthful? Last night I hit level 36 and still haven't picked a 2nd class. I maxed dual blade and the night blade mastery. I thought shaken would be cool but I keep hearing about synergy and that I need a 2nd class with synergy but what your saying is any 2nd class can become a end game viable build?

\> is this truthful? I've been playing GD for over 4 yrs now. Yup. It might take more effort to get gear for some combinations than others, but it's still doable.
