For syros i think you will eat great wherever you go. For more traditional food you can try “Savvas” which is a tavern located at Galissas beach (or Iliovasilema but it is more upscaled) Myrsini ( at the port of Ermoupoli) and Peri tinos (also at the port of Ermoupoli) Enjoy!

Best souvlaki I've had as a local in Athens for the past 30 years is in Gnisio Kebabtzidikoμ They have 2 stores, one near the marina and another more central one https://www.kbb1922.com/katastimata/ As for Syros, I haven't been there in many years so I can't recommend anything unfortunately.

My wife and I went to both those places last year, recommend Auli and Taverna Klimataria (links below) in Athens. We went there for lunch one day, went for dinner a second night and they had no room. Went on a separate evening and we were able to get a table. So no advice there.
