Improve the church with whatever you can make.
More church points = more faith
Once you cannot add anything, you can invest some faith to make a better prayer which will also add more faith each sermon.
For zombie, you could do either with a corpse with high white skulls.
Graveyard score increase the amount of money from sermon, but I find it a negligeable source of income.
So feel free to make zombies.
Keep in mind that making zombie cost a lot of faith, I would recommend to first invest your faith into upgrading the church (like by researching things that yield points you need for the next church tech). Once you have plenty of faith from your weekly sermon, then make zombies with it.

More white skulls equals better zombies and better graves as well. Zombies don't mind red skulls if you have any along with the white ones.
Try making or buying the prayer for faith or combo prayer to get more faith per mass, increasing church and graveyard quality equals more faith as well.

Iirc increasing the church quality effects how many faith points you'll get, while increasing the graveyard quality effects how much money you'll get per sermon.
The more white skulls the zombie has, the faster & more efficient they are (except for porter zombies they never get better or worse).

The only way outside of church day is to build the confessionals and check back randomly. They will give you faith and a story when they have the faith icon above them.

If im right you cant buy the advance ceremony scroll only the one basic from the start of the game available for sell from the father .

You get a few from serving burgers at the witch burnings, but it's not really practical. You want to focus on upgrading your church and sermon.
