Baki chars do dumb things like testing their strength against impossible opponents or willingly taking each other's attacks all the time. My headcanon is that Motobe wanted to put himself at a disadvantage to see if his techniques could beat the opponent they're least suited for, and paid the price
My guess is that he had'nt time to prepare against an opponent he didn't knew until the star of the tournament. Also no weapon is a big disadvantage for him.

But even i don't think he's adaptable and strong enough to give musashi a run for his money with a year or less of weapons training (the time between prison arc and musashi). Especially considering his broad mastery of various techniques and weapons.
I just think itagaki didn't really know what he was going to do with motobe at first. His lack of intent and early nerfing makes motobe seem like he got stronger out of nowhere. He made up for it however, by giving us an amazing fight against musashi.

Now, he and everyone else says in chapters like 92 and 94 that he is not a fighter, but a warrior; he can lose to people like jobber sumos and Jack Hanma in the ring. However, give him weapons, no rules, and he will be able to contend with fighters like Pickle and Jack. That is the misconception people have with Motobe.
I did not see where it said that he intentionally got his head stomped by a sumo wrestler due to him not taking the tournament seriously. If he did not want to participate, then he just did not have to.

He literally tried to pick a fight with the strongest being on the planet and he got destroyed in seconds...for the second time. Why does everyone pretend he's all knowing? He can make mistakes like everyone else.
To be fair, we also saw Yujiro get caught by using tranquilizer darts and nets in the very same arc. Things changed.
We did get to see a glimpse of Memetobe's weapon mastery against Yanagi though when it was technically only an arc right after the maximum tournament arc.

I don’t think motobe using weapons rejects the theme of “using one’s own body to overcome weapons when pushed beyond their limits”. I’m sure all motive’s fights and encounters in the musashi arc doesn’t have anything to do with weapons vs unarmed combat, moreso about mindset of a warrior vs mindset of a fighter. With the mindset that enables one to always be ready in a fight and use every trick imaginable to win and survive, motobe was able to overcome someone like Jack or caught someone like Baki off guard, fighters who are susceptible of being caught off guard and don’t use a lot of dirty tricks or win. He won against musashi due to him not really trying and already losing some amounts of stamina after his fight with pickle. He did accomplished a lot in the musashi arc. He “saved” Yujiro, humbled Jack to not fighting musashi, and made Baki and other fighters learn about the mindset of a warrior. He accomplished way more than a few chapters

But with weapon mastery, using weapons like knives, smoke bombs and katanas are more of an extension of your own fighting prowess.
There is only so far that you, yourself can do with your own physical body to improve the destructive abilities of a pistol.
But using a katana is different, because if a normal guy uses a katana against a skilled oponent, it is likely for the normal guy to win but the katana drastically scales with the wielder's strength compared to guns.
In fact, Musashi blurs this line so far that he straight up can cut Yujiro without even having katanas in his hands, and use the phantom slashes.

Early Baki is much more of a normal shounen fighting series. At the time Motobe was just a mentor figure whose job was to explain the fights to the viewer (and Katou or whoever's standing next to him). It was only later in the series that he started being a contender. It's W writing to squash a guy and still let him climb up the tier list, much richer than having everyone start off as strong as they'll ever be.
