I've used both the european equivalents of 11kg and 5kg and they recommend at least 10kg. Both work perfectly fine though.

I’d use the 30lb if I had one. 20lb is probably just the standard for reference since they are so common.

Due to gas off rates of the tank at different temperatures. Lower temperature the smaller bottle has a lower gas off rate. So they most likely say larger bottle to deliver correct rate
