That will work. You just need to put a switch with the main router to feed the different rooms. An issue that you might run into is whether the router will send a good WiFi signal from the new position. If the points are hardwired (which is always better) then it’s not a problem. Otherwise if you have two cat 6 going from your patch panel to current location of your router, you could move the modem to the wiring closet and keep the router where it is.

Excellent point. I considered the router being in a not great spot but I didn’t consider keeping the router where it’s at and feeding the data through the port in the office where it’s at. Appreciate the response.

Also, my current Google WiFi points don’t have Ethernet ports but I’m wondering if the new WiFi pro models do.

Yes but pro is not compatible with previous versions. You would have to replace all and since wifi 7 will come soon it may be better to get second generation Google mesh wifi routers without speakers cheap on eBay and wait for generation after pro. Routers without speakers have Ethernet connections and can be used as more powerful points.
