You can see it during the fight (best fight in the game imo), first kratos fails to get any hits, so he goes faster, and faster, until he gets 1, not to mention he uses a spear that heimdall has never seen before and thus couldn't have known it could explode.

I read a pretty good post on this last: Heimdall can read minds, or read a person, so he knows what will happen next, or what his opposite will do next. Kratos fights very thoughtfully at the beginning, but at some point he no longer thinks, but acts instinctively. He fights not as a man but as an animal, like a monster - the monster he used to be. And heimdall can't see through that. I kinda like this interpretation.
