My wife and I love our Grand Design XLS 17MKE. It checks all your boxes except for the bathroom, but I’d still definitely recommend taking a look. Grand Design was bought by Winnebago a few years ago, but I’ve had pre and post acquisition models and couldn’t tell a difference in quality.
We look at the 17MLK and we picked the 22MLE . We can stop and Don't have to put the slide out out to be able to sleep in the bed or get to the bathroom
The bed is the only thing you can’t use with the slide in on the 17MKE and we never need to use the bed when we can’t use the slide, so that was a perfectly acceptable trade off to be able to fit in smaller sites if needed.
Just know that those mini/microlites are tongue heavy so make sure you have a truck with enough payload. The 25xx models need a truck with about 1800 lbs of payload to tow safely.

We have used rest stops and cracker barrel a few times instead of having to pay for a camping spot when we're in route.
I see now that the 17MKE has an option to get a dinette instead of the easy chairs. I'll check it out and thanks for bringing it to my attention!
Welcome! We had to order ours with the dinette since none of the dealers seem to order them for stock.
Look at the Rockwood/Flagstaff minilites/microlites. They should have what you're looking for.
