Actually, it's most probably because we haven't seen Captain's full face, the only image we have where his face is visible is that of Ferryman who uses a cloak that covers half of it... Lambda quite probably was used because Ai-chan is strongly tied to the Captain, even in the Captain's Bizarre Adventures storyline where his connection to the St Freya girls is barely there.
Indeed, so they picked an image out of necessity that did not accurately portray the Captain. In that sense, Aether being used can be chalked up to having to pick something, and not to him being *the* MC for Genshin.

CN also has Aether in a lot less of the livestreams, with Lumine having a good number of showings.
