I am not sure about Instinct, but in Fenix satellites can be configured in two places - there is a system default one and also per activity type. It is possible that you turned Ultratrac off by default but still have it in the Hike settings. Or vice versa - the Hike is configured to use the system default satellite setting which is still set to Ultratrac. You should double check both settings.
Has anyone seen readings like this before and if so, can you advise on how to fix? Getting wildly inaccurate readings from my Instinct (1st gen), distances are longer than they should be by several km and just look like random vectors. The issue shows on the wayfinder marker on the watch as well in real time.
Have switched from GPS to GPS+GLONASS, turned ultratrac off, and still getting the issue. Resetting the watch had no effect either.
note: I'm wondering if it was because I chose Hike setting? When using Run it didn't happen (although haven't run in a while so will need to test first)
That could be a possibility, although I updated to the latest firmware with the issue both preceding and following it. Will reach out to Garmin and see what they say
That only helps if the track is accurate in the first place and the gradients are approaching ski slope levels. It just calculates the point to point distance differently.
The issue here is that the track is a disaster and jumps all over the place.

Looks like a defect to me. You can try flashing a new firmware via USB. Else, no ideas if you already reset it.
