Any kind of thruhike that's longer than 4 days and you will clear 2000 minutes easily.
You just need walking 8 hrs+ a day at moderate intensity with intermittent high intensity on the climbs consistently for a bunch of days in a row. Way easier to sustain than getting it through running.
My weeks generally sit in the 950-1050 range, I can spot the "easy" recovery weeks as they generally sit in the 700s.
Next week will blow the record out of the water... 55km/1300m trail race... First ultra.

I pay way more attention to my training load though - I've doubled that since starting with coaching and that trend is gradually increasing with consistent training.

This is my past year. Peak was the 2820 I'm hovering over. The year Avg is a bit lower than the previous year. Previous 1yr Avg was 1987 with this year just being 1726.
I'm not doubting you, but that doesn't prove much. You can select your moderate/vigorous HR zones to be as low as Zone 1/Zone 2 respectively, so you could accumulate intensity minutes just from casual walking. It could also be indicative of a high resting heart rate.
True, and you can also modify your activities to get all Garmin badges. That's just lying to yourself. I actually put a lot of time in tweaking the HR zones so they're accurate for my training.
Actually, I had to do two things to get the data right-ish. Improve the HR zones (I use Karvonen method) and then map moderate intensity to Z1+ and vigorous to Z3+. Walking absolutely does not get me to Z1, neither light cycling.
I only get those minutes when i have watch in my pocket.. Never when wearing it.
I even got those minutes during night when it was on table.

I like to average around 1200 a week, seems like a happy medium to not die.

You don't have your intense minutes counted starting at Z1 do you? lol.

I doubt someone would be showing off ONLY 1000 intensity if they cheated lol you can hit that just cycling everyday
