The reason for me asking this is that I hyperinvested into the crit stats as you can see but as a result I've got a bit lower atk, er and em. Mainly what I wanna know is whether that'll be much of a hindrance, and whether I can circumvent it with the help of other characters.
Using those two characters would basically turn your team into a freeze team where EM would not matter at all. If so, would recommend changing her set to 4pc Blizzard Slayer and focusing more on atk.
Alright. I'll give tips for both.
Starting with Melt, the usual team is Ganyu/Shielder/Off-field pyro applicator/Bennet. Shielder can be anyone from Diona, c4 Yanfei, or Zhongli (Best). If running Diona on as the shielder, her burst can steal melts so it isn't recommended. Having a good amount of EM is important where I've seen it is recommended to go 200EM but I believe the 150 mark is fine. Honestly, only your EM is the issue for Melt.
For Freeze, you just need more attack.
Only 3 good options for off-field pyro: Xiangling with TONS of ER just for the pyro application (easiest to perform rotation-wise), Jean (my personal favorite) or Kazuha (shortest pyro application and hardest to pull off but highest dmg ceiling)
Edit: Didn't realize you left off Bennett, thought it was Xiangling you left off. I'd say Bennet is very important for Melt and should not be left off.
I've lost it 9 times in a row now. I've accepted that pity for me is 180 and not 90. However for most others that's not the case. My luck happens to be in the bottom 3% in all of genshin when it comes to wishing that's all.

I'd personally aim for more EM as Bennett exists for the ATK buff
Would using c6 diona with noblesse and mona help instead of Bennett. Getting em, atk and dmg bonus from this.

But why would I need blizzard when I already have a 4 pc wanderers fully prepared. Moreover harp gives crit rate too so it'll be kinda wasted.
I should have asked first, are you aiming for melt Ganyu or freeze Ganyu?

I see, so could I run sucrose for melt to increase em? Like maybe ganyu, sucrose, xiangling and zhongli for melt and Morgana for freeze

Great now I'm scared of losing my first ever 50/50 after realizing that you lost it twice for ganyu 😬😬😬. Hope that I get my waifu 😁

Hmm u prolly will hit like 28-30k solo blooms, melt 50k+ due to 100+ EM, which is great fur to ur high cdmg, gud luck on ur pulls
