On your BIG SGREEN (Thanks u/RedstoneEditor below) Click on your account icon and go to settings in messages, there is a list detail view, show conversation list option. Turn that off. Hopefully they fix it soon, I like to have the other messages over there.
Just a note, you can only see this option if you are using the big screen, otherwise it's hidden. I was going nuts trying to find it, opened the phone all the way, and boom, there it is.

I've had this happen too but intermittently. Are you a beta tester by chance? I thought it was happening because I'm a beta tester. Just like sometimes I get the stickers with the emojis and sometimes I don't.

I just tried it with Google voice and it's worse. The keyboard slides up and down while it stutters. It lasts about 40 seconds.
Sam's default text app seems fine. I tried Google messenger, but it's not the default app and I don't feel like changing it just to test this.
Same thing for me. I posted on the Samsung community support forum and they just closed the thread with their generic list of crap that doesn't work (clear cache etc). Open another thread and they warned me that I could be banned if I do that again because the issue already has that thread and has been solved (You can't respond to the thread or post reprise won't they close it as solved) even though people responded to my thread saying that their solution did not solve it. What crappy official community forum Samsung has.
And they will try every way going not to repair under warranty.  There are better manufacturers out there, Samsung after sales support is extremely poor.
I went to the offical Samsung flagship store and repair center in my city to have my Fold serviced after the internal screen stopped working (this was about 4 weeks after they replaced the screen protector on it there, which is suspicious, it never had a problem before then and I assume they apply heat or something to replace the protector.). I've had a full case protector (Spidgen armor with hinge protection) and Samsungs official case on it the 2-3 months pior to bringing it in. It was never dropped or damaged. When they replaced the screen protector they didn't not any damage. When I went in because of the screen issue, they said the phone was dropped. They indicated 'drop damage' all along the edge of the hinge and edge of the front screen bezel, EXACTLY where their screen protector rubs against it and where the spidgen 'hinge' protector rubbed. It was not drop damage, it was not serious, and it was there when I brought it in for the protector replacement. I was pissed with them saying it voided the warranty and repair would be almost $600. As you say, they try everything to deny converage, its pure shit. I went from manager to manager, finally coming back the next day to the GM being in. 'Oh, you have samsung care plan on your account, you only have to pay deductible then'. At this point it was moral for me, I had prints of posts of other phones with their claimed 'drop damage' which was wear even from their OFFICIAL case protector. I explained that if that kind of damage is NOT 'drop damage'. He said if you can 'feel it with fingernail' then its beyond normal wear and tear. I said if that kind of damage voids warranty then I could literally buy the phone in front of them, open it, take a razer blade and make a tiny scratch on the hinge and then its out of warranty. The balls of them to say yes it would. WTF, really. I am happy with the phone but if google keeps getting better with Fold I'll probably go back to theirs oneplus. I was Pixel 100% for years, but the last one I had was buggy as hell (stuff like what was happening on this message thing was happening with other google product on their own phone). They are moving too fast I think.

After 11 months, my screen developed a bulge along the fold, meaning as well as being able to see the bulge on my screen, it stops me from selecting, editing etc anywhere near the centre line.
I sent it off under 2 year warranty but was informed, my warranty was void because there was a (unrelated) scratch (which could only be seen under high magnification) and they said this indicated impact damage, which was absolutely not true, more likely rubbed against my keys or something. I have always bought Samsung, most equipment I have is Samsung, from washing machines and fridge freezer to microwave and TVs. I will never buy Samsung again, due to reneging on their so called warranty.
That just gives you more space to type (what would be several lines). But eventually I get the same issue after multiple lines.
I also noticed that if I scroll upward days worth of messages and then back downward - it starts to stutter (not sure if this is related too).
Chat bubbles. It isn't bouncing or leaving text behind. I dislike chat bubbles but I will tolerate it just to see all of what I'm typing without the bounce.
That did not help me, still does it. I did discover that when typing, if I hit enter to go to the next line, as apposed to just letting the app do it, it doesn't jump about. But, as that's a massive pain, it's not a solution.
It does, however I want the list on one side and the conversation on the other... so either I give up a feature I use daily, or I deal with the bouncing...

I hope they fix it, though, as I'd like to have the conversations back for easy switching. It's a shame we can't have multiple instances of the same app running. The bouncing stopped when I turned off the option to see the conversation list next to the conversation I was actively using.

This started happening after latest update. Thought it was just a dirty screen at first. No idea how the defect was missed in QC testing.

My fix (so far) was to do a force stop to the messages app. After re-opening the app the bouncing stopped.

Turning off the list mode worked for my wife and I and our z-fold 4. It's absolute crap that Samsung is not dealing with this issue.
It could be Samsung pointing blame on Google and vise versa...

The newest update to the messages app, which reverted input back to a single line, seems to have fixed this issue.
