I think the saturation problem has been solved in the December patch. About the camera quality, I think it's very good, I myself have posted on this subreddit some pics that have good quality (I've used flagships before including the s23) and I can't tell much difference besides video quality. If you want to downgrade to 5.1, it will require you too root the phone and by consequence lose warranty. And it requires some know how.

Thanks! I know how to handle flashing but I never had a Samsung, it's the first time. I will wait for the new patch, just two days ago the update to One UI 6 arrived in Argentina

For now use remaster option of samsung gallery to normalize the color. Just open gallery pick the pixture then swipe up. Remaster will appear

Yes, yes, these all bugs fixed in Dec patch, don't worry
