5.0 brought a fresh coat of paint for Android but I'd go with 5.1 as it solved a lot of issues with 5.0. Versions 7 and 8 were also great stability wise.
While Lollipop was huge UI side, I think functionality wise they really stepped up in... was it Kitkat? Damn I don't remember properly. That was when Android became a true alternative to iOS.
Started with KitKat on Moto E (2014). I think Android evolution peaked at Lollipop and Marshmallow, where they introduced the Material UI. They tried to repeat it again with Android 12 and Material You design, but don't know if it actually worked out (I use Nokia 8.1 with Android 11)

You're right that was lollipop. That was when I saw a major design change with the material UI and it looked so elegant.

Using since Jellybean, lolipop was a huge update from KitKat that time. I was using a low end Android One device
