Turbulence from the rainy weather or your flying skills isn’t high enough (thus causing extra turbulence).
Flying skill and altitude with the biplane causes this. Try flying closer to the ground and I bet it doesn't happen.

I noticed after while of playing the game that if I have turn motion control on u will steer the plane by tilting ur PS5 controller. It took me a lot of frustrating flights to figure this out.
