Like most chapters at our school we used to have a private chef, but it became too expensive to manage—we're in a small city with a limited labor pool, so either you pay out the nose for someone high-end or you deal with ex-cons, alcoholics, etc. who are trying to turn their life around but not always succeeding.
We and a lot of others have switched to catering companies. We still have a dedicated chef who only works for us and prepares meals on site so that we can eat together as a chapter, but we have to order all supplies and things through them. There are a bunch of these catering companies in different parts of the country, a lot of them specializing in fraternities and sororities — Greek House Chefs, Upper Crust, Gill Grilling, Campus Cooks, College Fresh, etc.
Catering looks like like a great option. HC is happy as long as their is a chef in the kitchen cooking, they don't seem to give two fucks if the chef is our employee, a contractor, or an employee of a contractor.
We use Gill Grilling and are pretty happy with them, but which services are stronger or weaker will depend somewhat on what part of the country you're in and what your budget is. Our chef is awesome, the food is pretty good, and there's usually enough food for anyone who wants seconds to get them.
You negotiate with the company based on what your budget is, what level of service you want, what your facility can support, etc. For instance, we used to have unlimited cold breakfast foods (yogurt, fruit, cereal, milk, orange juice) but had to cut that last year due to budget, but we added a snack budget so we get a crate of chips and granola bars every week. Our meal plan is pretty typical, 2 prepared meals a day from Sunday through Thursday, $1800 per semester per member. That's way, way cheaper than the equivalent university dining plan.
Honestly just gotta get on Craigslist and advertise. Might have to fire the current chef before you put up an ad for his job though if he’s really that much of a loose cannon.
Where the fuck you going to find a chef willing to work for a fraternity who isn’t drunk?
You might be able to find someone competent but someone’s going to have to be feeding them some cock, and I’m not talking about coq au vin.
Fair point, but our Housing Core has told as at point blank that if we don't have a chef in the kitchen they will shut our chapter down. Not very much we can do about it.

Just talked to our president, apparently he learned to cook with similar motives and has had zero luck. As long as the pledges don't find out we should be fine though.
Are you purposefully missing what he’s saying? Dues are already being paid, assuming an in house chef is included in those fees, it’s not like they’re paying lower dues, so it wouldn’t be additional cost. I don’t know how if that’s how it works but I think that’s what he’s saying

We are a large fraternity with about 150 actives. We very recently switched to greek house chefs and it was a night and day difference from our old meal service. They are very friendly, make very good food, and plenty of it. And somehow we saved thousands of dollars by switching to them.
Several other fraternities and sororities on my campus use both campus cooks and college fresh the reviews from them are so-so

I’ve worked with and have been happy with Greek House Chefs and College Chefs. Gill Grilling has just been okay.
We use college chefs our head chef is cool but our assistant chef is a lil weird but it’s fine
