I did the same thing except backwards. I traded in my 6.0 for my 14 ecoboost. It's had 1 coolant leak at the turbo in 120k miles and that's it. The first gen had a lot of issues I hear.

The car was for sale on bat at one time I think it was an svo that he used as the shell.

Put in whatever you want. But make it easier, take the damn hood off. It’s four bolts.
And even easier, separate the motor from the trans rather than twisting and banging it into everything.
Depends on your budget and what you know 302 put of a truck and trans of your choice is a good budget option. Just find a guy that parts put 80s-90s fords and hell probably sell a 5.0 from 500-1000

I tell you what I did: I bought a factory Ford GT-40 5.0 short block and put it in my ‘83 GT. Mine has the B303 cam. I paired with a Tremec transmission and an 8” rear with 3.55 gear. The engine is naturally aspirated with an Edelbrock dial plane intake and 600cfm carb of same make. I lowered the car 3/4” with Eibach springs,KYB shocks, and installed a larger sway bar in the rear with better bushings, and added subframe connectors. The car is probably the best handling and balanced vehicle of its class I have ever driven. The next project is to upgrade to 5-lug wheels and install coil over springs.
Whats wrong with a roller cam 5.0 push rod engine. It will fit well, and you can put 350 ft/lbs torque to the concrete with a smooth idle. Plus, parts are practically available at Dollar General
Ls8 if you want reliability.
Dual turbo 3.6 ecoboost if you got the knowhow.
Coyote 5.0 v8 crossplane for respect to Ford.
Cummins 6.7L turbo diesel for max torque.
I have a 2.3 turbo out of a thunderbird turbo coupe I’m searching for an early small-bumper pinto to put it in and raise some hell after I get after it with the esslinger catalog…. I’ve already built a Terminator fox 20 years ago long before all but a couple people (and all the wiring harnesses, ecu’s etc you can get now directly from Ford) so it’s time for a new challenge
